Ingredients List

  1. 200g sashimi-grade salmon (or any preferred sashimi-grade fish)
  2. 2 tablespoons tamari (or soy sauce)
  3. 1 tablespoon sake
  4. 1 teaspoon sugar
  5. 1 teaspoon fresh ginger (grated)
  6. 2 green onions (sliced)
  7. 1/2 daikon (julienned)
  8. 1/2 carrot (julienned)
  9. 1/2 small cabbage (shredded)
  10. 2 tablespoons sushi vinegar
  11. 1 tablespoon sesame seeds (for garnish)

Steps

  1. Combine tamari, sake, sugar, ginger, and green onions in a medium glass or ceramic bowl, stirring until the sugar dissolves.
  2. Add salmon to the mixture and gently stir to coat.
  3. Cover with plastic wrap and refrigerate for 30 minutes to marinate.
  4. In a large bowl, mix daikon, carrot, cabbage, and extra green onions. Add sushi vinegar and gently toss to combine.
  5. Divide the salad mixture among serving bowls. Sprinkle sesame seeds over the marinated salmon and gently toss to coat.
  6. Arrange the salmon mixture over the prepared daikon salad in each bowl and serve.
