Ingredients List
- Fresh seafood mix (prawns, mussels, calamari) – approx. 600g
- 1 tbsp olive oil
- 100g chorizo sausage, sliced
- 1 small red onion, thinly sliced
- 1 red capsicum, chopped
- 1 tsp smoked paprika
- 1 cup paella or medium-grain rice
- 2 cups (500ml) chicken stock, warmed
- A pinch of saffron threads (or ½ tsp turmeric as a substitute)
- Salt and pepper, to taste
- 2 tbsp chopped fresh parsley
- Lemon wedges, for serving
Steps
- Heat the olive oil in a large frying pan over medium heat. Add the sliced chorizo and red onion, stirring for 2-3 minutes until lightly golden. Add the chopped capsicum and paprika, stirring for 1 minute or until aromatic.
- Stir in the Chicken Rice and 410ml (1 2/3 cups) of boiling water. Add the marinara mix and bring the mixture to a boil. Reduce the heat to low, cover, and cook for 10 minutes or until the rice is tender and the seafood is just cooked.
- Stir in the thawed peas and let the dish rest for 5 minutes before serving.
