Ingredients

  1. Fresh seafood mix (prawns, mussels, calamari) – approx. 600g
  2. 1 tbsp olive oil
  3. 100g chorizo sausage, sliced
  4. 1 small red onion, thinly sliced
  5. 1 red capsicum, chopped
  6. 1 tsp smoked paprika
  7. 1 cup paella or medium-grain rice
  8. 2 cups (500ml) chicken stock, warmed
  9. A pinch of saffron threads (or ½ tsp turmeric as a substitute)
  10. Salt and pepper, to taste
  11. 2 tbsp chopped fresh parsley
  12. Lemon wedges, for serving

Method

  1. Heat the olive oil in a large frying pan over medium heat. Add the sliced chorizo and red onion, stirring for 2-3 minutes until lightly golden. Add the chopped capsicum and paprika, stirring for 1 minute or until aromatic.
  2. Stir in the Chicken Rice and 410ml (1 2/3 cups) of boiling water. Add the marinara mix and bring the mixture to a boil. Reduce the heat to low, cover, and cook for 10 minutes or until the rice is tender and the seafood is just cooked.
  3. Stir in the thawed peas and let the dish rest for 5 minutes before serving.
