Ingredients List

  1. 1 x fresh kingfish fillet (skin on)
  2. Salt & freshly ground black pepper
  3. 3 tsp olive oil
  4. 2 garlic cloves, finely chopped
  5. Zest of 1 lemon
  6. 2 medium tomatoes, finely chopped
  7. 2 anchovy fillets, finely chopped
  8. 1 tbsp baby capers, rinsed
  9. 1 tbsp red wine vinegar
  10. 1/2 tsp sugar
  11. 1/3 cup pitted black olives, halved
  12. 2 tbsp fresh parsley, chopped
  13. 2 cups baby spinach leaves (to serve)

Steps

  1. Season kingfish with salt and pepper.
  2. Heat 2 teaspoons of oil in a frypan over medium-high heat. Cook the fish, skin-side down, for 3 minutes, then turn and cook for a further 3 minutes or until cooked through. Transfer to a plate, cover with foil, and rest while you make the sauce.
  3. Heat the remaining oil in the same pan over low heat. Add garlic, lemon zest, and a little salt and pepper, and stir for 2-3 minutes until soft but not coloured. Stir in tomato, anchovy, capers, vinegar, and sugar, then partially cover. Cook for 3-4 minutes until the tomato softens. Stir in olives and parsley.
  4. Serve the fish with sauce and baby spinach.
