Ingredients

  1. 200g prawn cutlets, peeled, deveined, and sliced
  2. 1 green mango, julienned
  3. 1 cucumber, thinly sliced
  4. 1 red chilli, finely sliced
  5. 2 tbsp fresh mint leaves
  6. 2 tbsp fresh coriander leaves
  7. 2 tbsp roasted peanuts, roughly chopped
  8. 1 tbsp fish sauce
  9. 1 tbsp lime juice
  10. 1 tsp brown sugar
  11. 1 garlic clove, minced
  12. 1 tsp sesame oil

Method

  1. Peel and devein the prawn cutlets, then slice them into bite-sized pieces. Set them aside in a bowl.
  2. Peel the green mango and julienne it into thin strips. Slice the cucumber into thin rounds, and thinly slice the red onion. Place all the vegetables and herbs in a large mixing bowl.
  3. Add the sliced prawn cutlets to the bowl with the green mango, cucumber, red onion, and optional red chili. Toss gently to combine the ingredients.
  4. In a small bowl, whisk together the fish sauce, lime juice, palm sugar (or honey), and a pinch of salt and pepper to create the dressing. Adjust seasoning as needed, balancing the sweet, salty, and sour elements.
  5. Pour the dressing over the salad and toss gently to coat all ingredients. Be careful not to break up the mango and prawns as you mix.
