Ingredients

  1. Flathead fillets – approx. 600g
  2. 1 cup dried multigrain breadcrumbs
  3. ½ cup finely grated parmesan cheese
  4. ½ cup low-fat natural yoghurt
  5. Olive oil, for frying
  6. Tartar sauce, to serve
  7. Coleslaw, to serve
  8. Lemon wedges, to serve

Method

  1. In a shallow dish, combine the dried multigrain breadcrumbs and finely grated parmesan cheese. In a separate bowl, place the low-fat natural yoghurt. Coat each flathead fillet in yoghurt, ensuring it's well covered, then dip into the breadcrumb mixture to coat thoroughly.
  2. Heat the olive oil in a non-stick frying pan over medium heat. Cook the coated fish fillets in batches for 2 to 3 minutes on each side, or until golden brown and cooked through. Once cooked, drain on paper
    towels.
  3. Serve the parmesan crusted flathead with tartare sauce, coleslaw, and lemon wedges on the side.
