Ingredients List

  1. 6 fresh Sydney Rock oysters, in the half shell
  2. 2 slices pancetta, chopped into small pieces
  3. 1 tablespoon pine nuts, toasted
  4. 1 tablespoon fresh chives, finely chopped
  5. 1 tablespoon fresh basil, finely chopped
  6. Juice of 1 lemon
  7. 1 tablespoon olive oil
  8. Freshly ground pepper (to taste)
  9. Rock salt (for serving)

Steps

  1. Combine the pine nuts, pancetta, chives, basil, lemon juice, and olive oil in a bowl. Taste and season with pepper.
  2. Spread the rock salt over a serving platter. Arrange the oysters on the rock salt. Spoon the pancetta mixture among oysters and serve immediately.
