6 fresh Sydney Rock oysters, in the half shell
2 slices pancetta, chopped into small pieces
1 tablespoon pine nuts, toasted
1 tablespoon fresh chives, finely chopped
1 tablespoon fresh basil, finely chopped
Juice of 1 lemon
1 tablespoon olive oil
Freshly ground pepper (to taste)
Rock salt (for serving)
Steps
