Ingredients List

  1. 2 whole cooked lobsters (about 400–500g each), meat removed and chopped
  2. 100g mixed salad leaves (e.g. rocket, baby spinach, cos)
  3. 1 small fennel bulb, thinly sliced
  4. 1 avocado, sliced
  5. 1 small cucumber, sliced
  6. 1/4 red onion, finely sliced
  7. 1/4 cup fresh mint leaves
  8. 1/4 cup fresh dill sprigs
  9. 1/3 cup buttermilk
  10. 1 tablespoon lemon juice
  11. 1 tablespoon finely chopped tarragon
  12. 1 tablespoon extra virgin olive oil

Steps

  1. If using whole cooked lobsters, start by preparing
    the lobster meat. Remove the claws and tail, then use a knife to extract the meat from the shell. Cut the lobster meat into bite-sized pieces and set aside.
  2. In a small bowl, whisk together the buttermilk,
    lemon juice, and finely chopped tarragon. Season with salt and cracked black pepper to taste. Set the dressing aside.
  3. Arrange the trimmed watercress and nectarine wedges on a large serving platter or individual plates.
  4. Scatter the lobster meat evenly over the salad base.
  5. Drizzle the buttermilk and tarragon dressing over the lobster and salad, ensuring everything is lightly coated.
