2 whole cooked lobsters (about 400–500g each), halved and cleaned
40g unsalted butter
2 tablespoons plain flour
1 1/4 cups milk
1/4 cup cream
1/2 teaspoon Dijon mustard
1/2 cup grated gruyère or tasty cheese
1/4 cup grated parmesan cheese
Salt, to taste
White pepper, to taste
2 tablespoons chopped fresh parsley (for garnish)

Preheat your grill to medium-high heat and line a baking tray with foil.
Place the halved and cleaned cooked lobsters on the prepared tray, flesh side up. Set aside while you prepare the Mornay sauce.
