Ingredients

  1. 6–8 scampi
  2. 2 teaspoons olive oil
  3. 1/2 teaspoon garlic powder
  4. 1/2 teaspoon smoked paprika
  5. 1 tablespoon lemon juice
  6. Salt and pepper to taste
  7. 1/2 cucumber, diced
  8. 1 cup cherry tomatoes, halved
  9. 1/4 red onion, thinly sliced
  10. 1/4 cup Kalamata olives, pitted
