Ingredients

  1. Ocean trout fillets – approx. 600g
  2. Olive oil spray (for grilling)
  3. Salt and pepper, to taste
  4. 1 cucumber, thinly sliced
  5. 1 green apple, thinly sliced
  6. 1 small red onion, finely sliced
  7. Fresh coriander, chopped (for garnish)
  8. 1 small red chili, finely chopped (optional)
  9. 1 tbsp sugar
  10. 2 tbsp lime juice (fresh)
  11. 1 tbsp fish sauce
  12. 2 tbsp peanut oil
  13. Lime wedges, for serving

Method

  1. Heat a barbecue hotplate or grill on medium-high heat. Spray both sides of the fish with oil. Season with salt and pepper. Cook fish, skin-side down, for 3 to 4 minutes or until the skin is browned and crisp. Turn fish and cook for a further 2 to 3 minutes for medium or until cooked to your liking.
  2. Meanwhile, combine cucumber, apple, onion, coriander, and chilli in a bowl.
  3. Whisk together the sugar, lime juice, fish sauce, and peanut oil in a small bowl until combined. Add two-thirds of the dressing to the salad and toss gently to combine.
  4. Serve the fish with salad and lime wedges, drizzling with the remaining dressing.
