Ingredients

  1. 300 g prawns, cooked and peeled
  2. 1 cup cherry tomatoes, halved
  3. 1/2 cup Kalamata olives, pitted
  4. 1 cucumber, diced
  5. 100 g feta cheese, crumbled
  6. 1/2 tsp dried oregano
  7. Juice of 1 lemon
  8. 2 tbsp olive oil
  9. Salt and pepper, to taste

Method

  1. In a bowl, combine the tomatoes, olives, cucumber, prawns, feta, and oregano. Toss gently to mix.
  2. For the dressing, whisk together the lemon juice and olive oil. Season with salt and pepper, then add it to the salad and toss gently. Set aside.
  3. Preheat a barbeque or chargrill pan over medium-high heat. Mix the olive oil and garlic, then brush this mixture over both sides of the bread. Cook for 2-3 minutes on each side until golden brown. Serve the prawn salad alongside the garlic bread.

Chef's Tip

Greek-style prawn salad is all about freshness, simplicity, and vibrant Mediterranean flavours. Sweet prawns pair beautifully with salty feta, juicy tomatoes, olives, and crisp cucumber, while lemon and olive oil bring brightness and balance to the dish. Keeping the ingredients fresh and lightly dressed allows the natural flavour of the seafood to shine while creating a light, refreshing meal full of texture and colour.
