Ingredients

  1. 10 x 180g king salmon fillets, skin on
  2. 2 tablespoons olive oil
  3. Salt, to taste
  4. Freshly ground black pepper, to taste
  5. Lemon wedges, to serve
  6. Fresh dill sprigs, to serve

Method

  1. Preheat the oven to 200°C (180°C fan-forced). Line a large baking tray with baking paper. Place the salmon on the prepared tray, drizzle with 1 tablespoon of olive oil, and spread evenly using your hands or a brush. Season with salt and pepper, then bake for 20 minutes. Set aside to cool slightly, then transfer to a serving platter.
  2. While the salmon is baking, mix the radish, fennel, parsley, and dill in a bowl. Drizzle with lemon juice and the remaining 1 tablespoon of olive oil, tossing to combine.
