Ingredients List
- 300g raw prawns, peeled and deveined
- 1 small pineapple, peeled, cored, and cut into slices
- 1 ripe avocado, diced
- 1 small red onion, finely sliced
- 1 red chilli, finely chopped (optional)
- 1 tablespoon olive oil (for grilling)
- Fresh coriander leaves, for garnish
- Salt and pepper, to taste
- 3 tablespoons olive oil
- 2 tablespoons lime juice (about 1 lime)
- 1 tablespoon honey
- 1 garlic clove, minced
- ½ teaspoon ground cumin
- Salt and pepper, to taste
Steps
- Preheat a barbecue grill or chargrill pan over medium-high heat. Grill the pineapple slices for 2-3 minutes on each side or until they are nicely charred.
- In a food processor, combine all the dressing ingredients and blend until well mixed and nearly smooth. Adjust the seasoning to taste.
