Ingredients List

  1. 1 eschallot, chopped
  2. 1 medium potato, peeled and diced
  3. 1 carrot, peeled and diced
  4. 1 celery stalk, chopped
  5. 500ml vegetable stock
  6. 1 bunch asparagus, trimmed and chopped
  7. 1/2 cup cream
  8. Salt and pepper, to taste
  9. Extra cream, for garnish
  10. Avruga caviar, for garnish

Steps

  1. In a medium saucepan, combine the eschallot, potato, carrot, celery, and vegetable stock. Bring to a boil, then reduce the heat and simmer, covered, for 5 minutes. Add the asparagus and continue to simmer for another 2 minutes.
  2. Using a blender or food processor, blend the soup with the cream until smooth. Season with salt and pepper to taste. Transfer the soup to a large heatproof bowl, cover with plastic wrap, and refrigerate for
    several hours or overnight until chilled.
