Ingredients

  1. 4 x 180g king salmon fillets, skin on
  2. 2 red capsicums, sliced
  3. 1 yellow capsicum, sliced
  4. 1 red onion, thinly sliced
  5. 200g cherry tomatoes, halved
  6. 2 garlic cloves, finely chopped
  7. 2 tablespoons olive oil
  8. 1 teaspoon sugar
  9. 1 tablespoon red wine vinegar
  10. Salt, to taste
  11. Freshly ground black pepper, to taste
  12. Fresh basil leaves, to serve

Method

  1. Preheat the oven to 200°C.
  2. In a large baking dish, combine the capsicum, cherry tomatoes, olive oil, onion, garlic, sugar, and vinegar. Season with salt and pepper. Bake for 25 minutes, or until the capsicum begins to soften.
  3. Season the salmon fillets with salt and pepper. Place them on top of the capsicum mixture in the baking dish. Return to the oven and bake for 10-15 minutes, or until the salmon reaches your desired doneness.
  4. Garnish with fresh basil leaves and serve alongside the bread.
