Ingredients List

  1. 8-10 fresh silver fish (whole, cleaned, and heads removed)
  2. 1/2 cup rice flour
  3. 1/4 cup cornflour
  4. Salt (to taste)
  5. Pepper (to taste)
  6. 1/2 teaspoon paprika (optional)
  7. 2 large eggs (beaten)
  8. Vegetable oil (for frying)
  9. Fresh parsley (chopped, for garnish)
  10. Lemon wedges (for serving)

Steps

  1. Rinse the silver fish under cold water and pat them dry with paper towels. Set aside.
  2. In a shallow bowl, mix the rice flour, cornflour, salt, pepper, and paprika (if using).
  3. Dip each silver fish into the beaten egg, ensuring it's well coated, then dredge it in the flour mixture, pressing lightly to ensure the coating sticks.
  4. Heat vegetable oil in a frying pan over medium heat. The oil should be hot but not smoking (around 180°C/350°F).
  5. Fry the coated silver fish in batches for 3-4 minutes per side, or until golden and crispy. Remove from the oil and drain on paper towels.
  6. Serve the crispy silver fish hot, garnished with fresh parsley and lemon wedges on the side.
