Ingredients

  • 500g tiger prawns, cooked and peeled
  • 2 ripe avocados, sliced
  • 1/2 cup pickled radish, thinly sliced
  • 8 rice paper wrappers
  • 1/4 cup fresh coriander, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup cooked vermicelli noodles (optional)
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar (for pickling radish)
  • Salt and pepper to taste
  • Lime wedges (for serving)

Steps

  1. Start by peeling and deveining the cooked tiger prawns. Set aside.
  2. In a shallow bowl, fill with warm water to soften the rice paper wrappers. Dip one wrapper at a time into the water for about 5-10 seconds, until soft but not too sticky.
  3. Lay the softened rice paper on a clean surface. In the center, add a few slices of avocado, pickled radish, a few prawns, fresh coriander, mint, and optional vermicelli noodles.
  4. Drizzle a little soy sauce, lime juice, and sesame oil on the ingredients, then carefully fold in the sides of the rice paper and roll tightly from the bottom up to enclose the filling.
  5. Repeat for the remaining rolls. Serve immediately with lime wedges on the side and a dipping sauce of your choice, if desired.
