Ingredients

    • 500g cooked tiger prawns
    • peeled and deveined
    • 200g linguine pasta
    • 2 cups rocket leaves
    • 1 red chili
    • finely chopped (adjust to taste)
    • 2 cloves garlic
    • minced
    • 1/4 cup olive oil
    • 1 tbsp lemon juice
    • 1/4 tsp chili flakes (optional
    • for extra heat)
    • Salt and pepper to taste
    • Fresh parsley

    • Grated Parmesan (optional

Steps

  1. Cook the linguine pasta according to the package instructions. Drain and set aside, reserving a little pasta water for later.
  2. In a large pan, heat the olive oil over medium heat. Add the minced garlic and chopped chili, cooking for 1-2 minutes until fragrant.
