    • 500g cooked and peeled prawns
    • 1 cup desiccated coconut
    • 1/2 cup breadcrumbs
    • 2 eggs
    • beaten
    • 1/2 cup plain flour
    • 1 tbsp olive oil (for frying)

    • zested and juiced
    • 1/2 cup mayonnaise
    • 1 tbsp fresh coriander
