Ingredients
- Vegetable oil, to shallow-fry
- 15 wonton wrappers, quartered
- 185g smoked salmon, flaked
- 1 avocado, stoned, peeled, finely chopped
- 1/2 red onion, finely chopped
- 1 Lebanese cucumber, seeded, finely chopped
- 1 tbsp lemon juice
- 2 tbsp finely chopped chives
Method
- Heat vegetable oil in a shallow frying pan over medium heat.
- Quarter the wonton wrappers and fry them in batches for 1-2 minutes until golden and crispy. Drain on paper towels.
- In a bowl, combine the flaked smoked salmon, chopped avocado, red onion, cucumber, lemon juice, and chopped chives. Mix gently to combine.
- Place a small spoonful of the salmon and avocado mixture onto each fried wonton wrapper quarter.
- Arrange the wonton bites on a serving platter and serve immediately.
