Ingredients
- 40g toasted pine nuts, coarsely chopped
- 40g (about 4-6 slices) pancetta, finely chopped
- 1 tbsp finely chopped fresh chives
- 1 tbsp finely shredded fresh basil
- 2 tbsp fresh lemon juice
- 1 tbsp extra virgin olive oil
- Freshly ground black pepper
- Rock salt, to serve
- 12 Pacific oysters, in the half shell
Method
- Combine the pine nuts, pancetta, chives, basil, lemon juice, and olive oil in a bowl. Taste and season with pepper.
- Spread the rock salt over a serving platter. Arrange the oysters on the rock salt. Spoon the pancetta mixture among oysters and serve immediately.
