Ingredients

  • 40g toasted pine nuts, coarsely chopped
  • 40g (about 4-6 slices) pancetta, finely chopped
  • 1 tbsp finely chopped fresh chives
  • 1 tbsp finely shredded fresh basil
  • 2 tbsp fresh lemon juice
  • 1 tbsp extra virgin olive oil
  • Freshly ground black pepper
  • Rock salt, to serve
  • 12 Pacific oysters, in the half shell

Method

  1. Combine the pine nuts, pancetta, chives, basil, lemon juice, and olive oil in a bowl. Taste and season with pepper.
  2. Spread the rock salt over a serving platter. Arrange the oysters on the rock salt. Spoon the pancetta mixture among oysters and serve immediately.
