Ingredients
- 500g thawed whole cleaned baby octopus
- 1 tbsp peanut oil
- 3 garlic cloves, crushed
- 2 long fresh red chillies, finely chopped
- 1 tbsp finely grated fresh ginger
- 2 bunches broccolini, cut into florets
- 80ml (1/3 cup) tomato sauce
- 2 tbsp sweet chilli sauce
- 1 tbsp brown sugar
- Steamed white rice, to serve
Method
- Prepare the baby octopus by using a sharp knife to separate the heads from the tentacles, just below the eyes. Remove and discard the eyes, then halve the tentacles.
- Heat oil in a wok or large frying pan over high heat. Stir-fry half the octopus for 2-3 minutes until just cooked, then transfer to a plate. Repeat with the remaining octopus, reheating the pan between batches as needed.
- Add garlic, chilli, and ginger to the pan and stir-fry for 1 minute until fragrant. Stir in the broccolini and cook for 2 minutes until tender. Mix in the tomato sauce, sweet chilli sauce, and sugar, and stir-fry for 2-3 minutes until the sauce thickens and boils. Return the octopus to the pan and stir-fry for 1 minute to heat through.
- Divide steamed rice among serving bowls and spoon the octopus stir-fry on top. Serve immediately and enjoy.
