Ingredients

  • 750g chat potatoes
  • Olive oil cooking spray
  • 8 slices white bread, crusts removed
  • 1/3 cup basil leaves
  • 1/3 cup grated parmesan cheese
  • 1 1/2 tbsp olive oil
  • 4 skinless salmon portions, bones removed
  • Dressed salad leaves, to serve

Steps

  1. Preheat the oven to 200°C. Lightly grease an oven tray and a 6cm deep, 20cm x 28cm (base) baking dish with oil.
  2. Place the potatoes in a saucepan and cover them with cold water. Bring to a boil over high heat and cook for 10 minutes or until tender. Drain and place on the prepared tray. Using a potato masher, partially mash the potatoes and spray them with oil.
  3. Meanwhile, place the bread in a food processor and pulse until roughly chopped. Add the basil and parmesan, processing to a fine breadcrumb mixture. With the motor running, add the oil and blend until combined.
  4. Arrange the salmon portions, skin side down, in the prepared dish and sprinkle the crumb mixture over the top.
  5. Place the tray with potatoes on the top shelf of the oven and the salmon on the shelf below. Bake for 25 to 30 minutes (depending on the thickness of the fish) or until the potatoes are golden and the fish is cooked through. Serve with the dressed salad leaves.
