Ingredients List

  1. 1 tbsp ground cumin
  2. 1 tbsp ground coriander
  3. 2 garlic cloves, crushed
  4. 1 tsp smoked paprika
  5. 1 tsp chili flakes (optional)
  6. Zest and juice of 1 lemon
  7. ½ cup fresh coriander, finely chopped
  8. ½ cup fresh parsley, finely chopped
  9. ⅓ cup olive oil
  10. Salt & pepper to taste
  11. 1 x kingfish fillet
  12. 1 tbsp olive oil (for pan frying)
  13. 400g can mixed beans, drained and rinsed
  14. 1 red capsicum, finely diced
  15. 1 small onion, finely chopped
  16. 2 garlic cloves, crushed
  17. ½ cup chicken or vegetable stock
  18. Salt & pepper to taste
  19. 1 tbsp olive oil (for cooking)

Steps

  1. For the chermoula, place all the ingredients in a large bowl and stir to combine.
  2. Add the kingfish to the chermoula and toss to coat well. Set aside to marinate for 15 minutes.
  3. Heat 1 tablespoon of oil in a large saucepan and add the onion. Cook, stirring, for 2-3 minutes until softened, then add the garlic and cook for a further 2 minutes or until fragrant. Remove from heat.
  4. Place 1/2 cup of mixed beans in a food processor and whiz until smooth. Add the bean puree to the saucepan with the capsicum, chicken stock, and remaining beans. Cook for a further 2-3 minutes until warmed through. Keep warm.
  5. Heat the remaining 1 tablespoon of oil in a frypan over medium heat. Cook the kingfish portions for 2-3 minutes on each side until just cooked through.
  6. Serve the kingfish with the Moroccan bean mixture and garnish with coriander.
