Ingredients

  • 300g piece sashimi-grade tuna
  • 450g piece seedless watermelon, rind removed
  • Juice of 2 limes
  • 1 long red chilli, seeded, very finely chopped
  • 2 tbsp very finely chopped Spanish onion
  • 2 witlof
  • 2 tbsp extra virgin olive oil
  • 2 tbsp very finely chopped chives
  • 2 tbsp baby coriander leaves

Steps

  1. Dice the tuna and watermelon into small 5mm cubes, keeping them in separate bowls. Drain the watermelon and mix it with the tuna, lime juice, chilli, and onion. Cover the mixture and refrigerate for 5-15 minutes to enhance the flavours.
  2. Prepare the witlof by trimming the bases and arranging the leaves on a serving platter. Drain excess marinating liquid from the tuna mixture, then stir in olive oil and chives. Spoon the mixture into the witlof leaves and garnish with baby coriander leaves. Serve immediately.
