Ingredients
- 4 large eggs
- 2 tablespoons milk
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon unsalted butter
- 2 tablespoons tobiko (flying fish roe)
- 1 green onion, thinly sliced
- Fresh herbs (e.g., parsley or chives), for garnish
- Soy sauce, to serve (optional)
Method
- Crack the eggs into a bowl. Add milk, salt, and pepper. Whisk until the mixture is smooth and well combined.
- Heat a non-stick frying pan over medium heat and add the butter. Swirl the pan to coat it evenly as the butter melts.
