Ingredients

  • 300g fresh scallops, cleaned and thinly sliced
  • 1/4 cup tequila
  • 1/2 cup fresh lime juice
  • 1 small red onion, finely chopped
  • 1 small cucumber, peeled and diced
  • 1-2 small chilies, finely chopped (optional for heat)
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, diced (optional)
  • Salt and pepper to taste
  • 1 tbsp olive oil (optional)

Steps

  1. In a glass or ceramic bowl, combine the thinly sliced scallops with fresh lime juice and tequila. Stir gently to coat the scallops and allow them to marinate for 20-30 minutes, or until the scallops turn opaque and cook in the citrus juice.
  2. While the scallops are marinating, prepare the other ingredients. Finely chop the red onion, cucumber, chilies (if using), and cilantro. Dice the avocado (if desired) and set everything aside.
  3. Once the scallops are ready, add the chopped onion, cucumber, chilies, cilantro, and avocado (if using) to the marinated scallops. Stir gently to combine.
  4. Season the ceviche with salt and pepper to taste. Optionally, drizzle with olive oil for extra richness.
  5. Serve immediately in chilled bowls, garnished with extra cilantro or lime wedges. Enjoy with tortilla chips or as a light appetizer!
