Ingredients

  • 5cm-piece fresh ginger, peeled, cut into thin matchsticks
  • 1 tbsp peanut oil
  • 1 tbsp fresh lime juice
  • 2 tsp soy sauce
  • 1 small fresh red birdseye chilli, finely chopped
  • 1 garlic clove, crushed
  • Pinch of salt
  • 6 scallops, in the half shell
  • 2 tsp sesame oil
  • 1 tbsp coarsely chopped fresh coriander

Steps

  1. In a small bowl, mix the ginger, peanut oil, lime juice, soy sauce, chilli, garlic, and salt. Arrange the scallops in a 30cm bamboo steamer basket and spoon a small amount of the ginger dressing over each. Cover with the lid.
  2. Fill a medium wok with 5cm of water and bring it to a boil over high heat. Lower the heat to medium-high and place the steamer basket over the boiling water. Steam for approximately 5 minutes or until the scallops are opaque.
  3. Transfer the scallops to serving plates, drizzle with sesame oil, and garnish with coriander. Serve immediately.
