Ingredients List
- 2 tbsp olive oil or ghee
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 green chilies, finely chopped (adjust to taste)
- 2 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp turmeric
- 1 tsp chili powder (adjust to taste)
- 2 tomatoes, chopped
- 200 ml coconut milk
- 300 g Vannamei prawns, peeled and deveined
- Salt, to taste
- Fresh coriander leaves, chopped (for garnish)
Steps
- Heat olive oil or ghee in a large pan over medium heat. Add the chopped onion, garlic, and ginger, and sauté until softened, about 3-4 minutes.
- Add the chopped green chilies and tomatoes to the pan, and cook for another 5 minutes until the tomatoes break down and become soft.
- Stir in the curry powder, turmeric, cumin powder, and garam masala. Cook for 1-2 minutes to allow the spices to release their flavours.
- Pour in the coconut milk and simmer the curry base for 5 minutes, stirring occasionally. Add salt to taste.
- Once the curry base is ready, add the cooked Vannamei prawns to the pan. Stir gently to coat the prawns in the curry sauce and cook for another 2-3 minutes to heat the prawns through.
- Finish by stirring in lemon juice and garnish with freshly chopped coriander.
