Ingredients

  • Canola oil cooking spray, to grease
  • 12 scallops, roe off
  • 2 cups loosely packed baby Asian greens

Chilli Dressing

  • 2 tbsp sweet chilli sauce
  • 1 tbsp fresh lemon juice
  • 2 tsp reduced-salt soy sauce

Steps

  1. To make the chilli dressing, combine the sweet chilli sauce, lemon juice, and soy sauce in a small jug. Cover with plastic wrap and place in the fridge until required.
  2. Lightly spray a large non-stick frying pan with canola oil cooking spray and heat over medium-high heat. Add the scallops and cook for 1 minute on each side for medium, or until cooked to your liking. Drizzle with 2 tablespoons of the chilli dressing and cook for a further 1 minute or until brown.
