Ingredients
- 75g (1/2 cup) plain flour
- 1 1/2 tsp freshly ground black pepper
- 1 tsp salt
- 3 medium (about 100g each) cleaned squid hoods, cut into 5mm-thick rings
- 80ml (1/3 cup) vegetable oil
- 1 x 100g pkt baby Asian greens
Method
- Place the flour, pepper, and salt in a resealable plastic bag. Add the squid rings and seal the bag tightly.
- Shake the bag until the squid is evenly coated in the flour mixture. Set aside while preparing the cooking pan.
- Heat the vegetable oil in a large, non-stick frying pan over high heat. Add the squid and cook, turning occasionally, for 2-3 minutes or until golden brown and just cooked through. Remove and place on a plate lined with paper towel to drain excess oil.
- Arrange the baby Asian greens on serving plates and top with the salt and pepper squid. Serve immediately.
