Ingredients
- 4 potatoes
- 20g butter
- 3/4 cup fresh breadcrumbs
- 200g salmon mince
- 4 green onions, chopped
- Zest and juice of 1 lemon
- 1 egg
- Flour, for rolling
- 1/4 cup vegetable oil
- 1/4 cup mayonnaise
- 1 tbsp sour cream
- 1 tbsp capers, chopped
- Pinch dill, chopped
- Salad, to serve
Method
- In a saucepan of boiling water, cook the potatoes for 15-20 minutes or until tender. Drain well and mash with butter until nearly smooth. Season to taste.
- Add the breadcrumbs, salmon mince, green onions, lemon zest and juice, and the egg to the potato mixture. Mix thoroughly and allow to cool slightly. Shape into 8 oval patties and roll in flour, shaking off the excess.
- Heat oil in a large frying pan over high heat. Cook the patties in two batches for 5-6 minutes, turning once, until golden and heated through. Drain on paper towels.
- To prepare the caper mayonnaise, combine mayonnaise, sour cream, capers, and a pinch of chopped dill. Set aside.
- Serve the salmon patties with the caper mayonnaise, accompanied by a fresh salad.
