Ingredients

  • 1/2 tsp paprika
  • 1/2 tsp ground cumin
  • 2 cups vegetable oil
  • 6 Mission Mini Wraps
  • 1/2 cup coriander sprigs
  • 750g cooked large Australian Tiger Prawns, peeled, deveined, halved lengthways
  • 1 Lebanese cucumber, halved lengthways, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 tbsp drained pickled jalapeno chillies, chopped (optional)
  • 1 tbsp lime juice
  • 3/4 cup mild chunky tomato salsa
  • 1 large avocado, mashed

Steps

  1. In a bowl, mix together the paprika and cumin. Heat the oil in a large deep frying pan over high heat. Cook the wraps one at a time for 30 seconds on each side until they are lightly browned and crispy. Drain on paper towels. While they are still warm, sprinkle half of the paprika mixture over the wraps and season with salt. Reserve half of the coriander. Pat the remaining coriander dry and carefully fry in batches for 10-20 seconds, or until bright green. Use a slotted spoon to remove and drain on paper towels.
  2. In a medium bowl, combine the prawns, cucumber, onion, jalapenos, lime juice, and the reserved coriander. Season to taste.
  3. To serve, divide the wraps among six plates. Spread each wrap with salsa, then top with the prawn mixture, a spoonful of mashed avocado, and the fried coriander leaves.
