Ingredients

  • 1/2 red onion, finely chopped
  • 1/2 long red chilli, seeded, finely chopped (optional)
  • 1 tomato, finely chopped
  • 12 white corn tortillas
  • 1 baby cos lettuce, leaves separated
  • 36 (about 750g) cooked tiger prawns, peeled
  • 3/4 cup fire roasted red pepper strips (roasted capsicum)
  • 1 cup coriander sprigs
  • Lime wedges, to serve

Smoky Mayonnaise

  • 1/2 cup (150g) whole egg mayonnaise
  • 1/4 tsp smoked paprika
  • 1/4 tsp Mexican chilli powder
  • 2 tsp lime juice, extra

Steps

  1. Place avocado and lime juice in a bowl and mash until almost smooth. Stir in onion, chilli (if desired), and tomato. Season to taste.
  2. To make smoky mayonnaise, combine mayonnaise, paprika, chilli powder, lime juice, and 2 teaspoons of water in a bowl. Season to taste.
  3. Heat the tortillas following packet directions. Divide tortillas among serving plates. Top with guacamole, lettuce, prawns, roasted capsicum, smoky mayonnaise, and coriander. Serve with lime wedges.
