  • 4 green shallots, ends trimmed and cut into matchsticks
  • 1 tbsp mirin
  • 1 tbsp light soy sauce
  • 1 tsp caster sugar
  • Ground white pepper
  • Rock salt or ice, to serve
  • 24 Pacific oysters
  • 1 tbsp pickled ginger, drained
  • 2 tsp toasted sesame seeds
