Steps
- Place the green shallots in a bowl of iced water and set aside for 15 minutes, or until the shallots curl.
- Meanwhile, combine the mirin, light soy sauce, and caster sugar in a small bowl. Season the mixture with ground white pepper and a pinch of salt.
- Arrange the rock salt or ice on a serving platter. Place the Pacific oysters on the platter. Spoon the dressing over the oysters and top each one with the curled shallots, pickled ginger, and toasted sesame seeds.
