Ingredients

  • 1 chorizo sausage, finely chopped
  • 24 Pacific oysters, in the half shell

Basil Dressing

  • 80ml (1/3 cup) olive oil
  • 2 tbsp balsamic vinegar
  • 1/3 cup loosely packed coarsely chopped fresh basil
  • 2 green shallots, ends trimmed and finely chopped
  • 1 garlic clove, crushed
  • Salt and freshly ground black pepper

Steps

  1. To prepare the basil dressing, whisk together the olive oil, balsamic vinegar, chopped basil, green shallot, and crushed garlic in a jug until well combined. Taste and season with salt and pepper.
  2. Heat a small non-stick frying pan over medium heat. Add the chopped chorizo and cook, stirring occasionally, for about 3 minutes or until crisp. Remove from heat.
