Ingredients List

  1. 400g cooked lobster meat, roughly chopped
  2. 2 cups mixed lettuce leaves
  3. 2 cups rocket
  4. 2 avocados, peeled and sliced
  5. 1 small red onion, thinly sliced
  6. 1/2 cup fresh mint leaves
  7. 1/2 cup fresh coriander leaves
  8. 2 mangoes, peeled and sliced
  9. 1 cup fresh raspberries
  10. 4 tablespoons lime juice
  11. 4 tablespoons olive oil
  12. 2 teaspoons Dijon mustard
  13. 2 teaspoons caster sugar
  14. Salt, to taste
  15. Black pepper, to taste

Steps

  1. Arrange lettuce and rocket on a platter. Cut avocado in half and remove the stone. Peel and slice. Arrange over the salad with onion, mint, coriander, mango slices, and raspberries. Top with lobster meat.
  2. Whisk juice, oil, mustard, and sugar together in a small bowl until combined. Drizzle over the salad. Serve immediately.
