Steps
- Preheat the oven to 220°C. Place the potatoes into a large roasting pan. Add 2 tablespoons of oil, onion, pancetta, mushrooms, thyme, and salt and pepper. Toss to combine and roast for 20 minutes.
- Rub the remaining 1 tablespoon of oil over both sides of the fish portions. Season with salt and pepper. Place on top of the potato mixture. Bake the fish and vegetables for a further 10 minutes, or until the fish flakes when tested with a fork and the vegetables are cooked through.
- Remove from the oven. Cover loosely with foil and stand for 5 minutes before serving.
