Ingredients

  • 4 ora king salmon portions

Lemongrass and Makrut Lime Glaze

  • 1/2 cup Buderim Ginger Marmalade
  • 1/4 cup lime juice
  • 2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 2 makrut lime leaves, finely shredded
  • 1 lemongrass stem, finely chopped
  • 1/2 tsp dried chilli flakes
  • 2 tbsp fresh coriander, chopped

Method

  1. Make the glaze by stirring together the Buderim Ginger Marmalade, lime juice, brown sugar, soy sauce, finely shredded makrut lime leaves, finely chopped lemongrass, and dried chili flakes in a saucepan over low heat for 2 minutes or until the marmalade dissolves. Increase the heat to medium-low and simmer for 8-10 minutes or until the glaze thickens. Stir in the chopped fresh coriander.
  2. Preheat a barbecue grill or flat plate on medium-high heat. Cook the 4 salmon portions for 2 minutes on each side or until almost cooked through. Reduce the heat to medium, then brush the salmon with the glaze. Cook for an additional 1-2 minutes on each side or until the salmon is glossy and charred.
