Ingredients
- 4 ora king salmon portions
Lemongrass and Makrut Lime Glaze
- 1/2 cup Buderim Ginger Marmalade
- 1/4 cup lime juice
- 2 tbsp brown sugar
- 1 tbsp soy sauce
- 2 makrut lime leaves, finely shredded
- 1 lemongrass stem, finely chopped
- 1/2 tsp dried chilli flakes
- 2 tbsp fresh coriander, chopped
Method
- Make the glaze by stirring together the Buderim Ginger Marmalade, lime juice, brown sugar, soy sauce, finely shredded makrut lime leaves, finely chopped lemongrass, and dried chili flakes in a saucepan over low heat for 2 minutes or until the marmalade dissolves. Increase the heat to medium-low and simmer for 8-10 minutes or until the glaze thickens. Stir in the chopped fresh coriander.
- Preheat a barbecue grill or flat plate on medium-high heat. Cook the 4 salmon portions for 2 minutes on each side or until almost cooked through. Reduce the heat to medium, then brush the salmon with the glaze. Cook for an additional 1-2 minutes on each side or until the salmon is glossy and charred.
