  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 cucumber, diced
  • 2 medium tomatoes, chopped
  • 1/4 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/4 cup feta cheese, crumbled
  • 1 tbsp fresh oregano, chopped
  • 1 tbsp extra virgin olive oil (for salad)
  • 1 tbsp red wine vinegar (for salad)

  2. Place the seasoned scampi on the grill and cook for 2-3 minutes per side, or until they are pink and slightly charred. Remove from the grill and set aside to rest.
  3. In a separate bowl, combine the diced cucumber, chopped tomatoes, sliced red onion, Kalamata olives, and crumbled feta cheese.
  4. Drizzle the salad with olive oil and red wine vinegar, and sprinkle with fresh oregano. Toss the ingredients together gently to combine.
