  • 550g Atlantic salmon

  • 2 Jazz apples, cored, julienned
  • 1 small celeriac, peeled, cut into thin batons
  • 1 cup flat-leaf parsley leaves, plus extra to serve
  • 1/4 cup whole egg mayonnaise
  • 1 tsp Dijon mustard
