Steps
- Heat a barbecue hotplate or grill on medium-high heat. Spray both sides of the fish with oil. Season with salt and pepper. Cook fish, skin-side down, for 3 to 4 minutes or until the skin is browned and crisp. Turn fish and cook for a further 2 to 3 minutes for medium or until cooked to your liking.
- Meanwhile, combine cucumber, apple, onion, coriander, and chilli in a bowl.
- Whisk together the sugar, lime juice, fish sauce, and peanut oil in a small bowl until combined. Add two-thirds of the dressing to the salad and toss gently to combine.
- Serve the fish with salad and lime wedges, drizzling with the remaining dressing.
