Ingredients

  • 300g pappardelle pasta
  • 150g (1/2 cup) sundried tomato pesto
  • 60ml (1/4 cup) thickened cream
  • 40g baby spinach
  • 220g garlic prawns in a garlic herb marinade
  • Lemon wedges, to serve

Steps

  1. Preheat oven to 220°C (200°C fan-forced). Cook the pasta in a large saucepan of boiling water for 2-3 minutes or until just al dente. Drain and return to the pan. Add the sundried tomato pesto and cream, tossing until the pasta is evenly coated.
  2. Cut 4 x 30cm squares of baking paper. Divide the pasta mixture among the paper squares, arranging in the centre. Top each with spinach and prawns. Fold two sides of the paper over the filling to enclose, then tuck remaining sides under to seal. Transfer to a baking tray.
  3. Bake for 12 minutes or until prawns are just cooked through. Place each parcel on a serving plate, carefully opening each one before serving with lemon wedges.
