Steps
- Preheat the oven to 200°C (180°C fan-forced). Line a large baking tray with baking paper. Place the salmon on the prepared tray, drizzle with 1 tablespoon of olive oil, and spread evenly using your hands or a brush. Season with salt and pepper, then bake for 20 minutes. Set aside to cool slightly, then transfer to a serving platter.
- While the salmon is baking, mix the radish, fennel, parsley, and dill in a bowl. Drizzle with lemon juice and the remaining 1 tablespoon of olive oil, tossing to combine.
- Arrange the salad over the baked salmon and sprinkle with lemon rind. Season to taste and serve with extra lemon wedges on the side.
