Ingredients

    • 1 whole side (about 1.6kg) ora king salmon fillet, skin off, boneless
    • 2 tbsp extra virgin olive oil
    • 1 bunch radishes, finely sliced
    • 1 small fennel bulb, finely sliced
    • 1/4 cup fresh continental parsley leaves
    • 1/4 cup fresh dill
    • 1 lemon, rind finely grated, juiced, plus extra wedges, to serve

Steps

    1. Preheat the oven to 200°C (180°C fan-forced). Line a large baking tray with baking paper. Place the salmon on the prepared tray, drizzle with 1 tablespoon of olive oil, and spread evenly using your hands or a brush. Season with salt and pepper, then bake for 20 minutes. Set aside to cool slightly, then transfer to a serving platter.
    2. While the salmon is baking, mix the radish, fennel, parsley, and dill in a bowl. Drizzle with lemon juice and the remaining 1 tablespoon of olive oil, tossing to combine.
    3. Arrange the salad over the baked salmon and sprinkle with lemon rind. Season to taste and serve with extra lemon wedges on the side.
