Ingredients

    • 1/4 pineapple
    • thinly sliced
    • 2 baby cos lettuce
    • leaves separated
    • 500g cooked tiger prawns
    • peeled
    • deveined
    • tails intact
    • 1 avocado
    • cut into wedges
    • 1 small red onion
    • thinly sliced

    Green Mojo Dressing:

    • 1/2 bunch fresh coriander
    • leaves chopped
    • 1/4 bunch fresh continental parsley
    • leaves chopped
    • 2 garlic cloves
    • 1 fresh jalapeño chilli
    • deseeded and finely chopped
    • 60ml (1/4 cup) olive oil
    • 1 tbsp fresh lime juice
    • 2 tsp apple cider vinegar

Steps

  1. Preheat a barbecue grill or chargrill pan over medium-high heat. Grill the pineapple slices for 2-3 minutes on each side or until they are nicely charred.
  2. In a food processor, combine all the dressing ingredients and blend until well mixed and nearly smooth. Adjust the seasoning to taste.
  3. On a serving platter, arrange the cos lettuce leaves. Layer the grilled pineapple, cooked prawns, avocado wedges, and sliced red onion on top. Drizzle the prepared dressing over the salad to serve.
