Ingredients

  • Free-range eggs
  • 2 tbsp snipped chives
  • 2 tsp brown sugar
  • 2 tbsp pure olive oil
  • 170g Blue Swimmer Crab meat, drained
  • 1 avocado, diced
  • 1 cup mint leaves, torn
  • 1 eschallot, sliced
  • Zest and juice of 1 lime
  • 1 tsp white sugar
  • Drop of sesame oil
  • Extra lime cheeks, to serve

Steps

  1. Prepare the salsa by combining avocado, mint, and eschallot in a bowl. Whisk together lime zest, lime juice, white sugar, and sesame oil, then drizzle over the mixture. Toss gently to combine.
  2. In a small jug, lightly beat the eggs with chives and brown sugar. Heat oil in a medium frying pan over medium-high heat. Pour in the egg mixture and, using a spatula, gently pull the edges toward the centre to allow uncooked egg to flow to the edges. Cook for 2-3 minutes or until the base is set.
  3. Place the frying pan under a preheated grill and cook for 1-2 minutes until the omelette is puffed and fully set. Sprinkle Blue Swimmer Crab meat over one side of the omelette, then fold it in half. Cut into portions and transfer to plates. Top with salsa and serve with lime cheeks.
