Ingredients
- 30g butter
- 100g streaky bacon, sliced
- 1 brown onion, finely chopped
- 250g desiree potatoes, peeled, cut into 1cm cubes
- 1/4 cup plain flour
- 1L salt-reduced chicken stock, heated
- 460g Blue Swimmer Crab meat, picked and cut into chunks
- 120g Australian baby kale, coarsely chopped
- 2 cups frozen peas, corn, and capsicum
Method
- Heat butter in a large saucepan over medium heat. Cook bacon, onion, and potato, stirring, for 5 minutes or until golden. Add the flour and cook, stirring to coat well, for 1 minute. Season to taste.
- Slowly add the stock and bring to the boil. Reduce heat and simmer for 3-4 minutes or until the potato is tender. Stir in the Blue Swimmer Crab meat, kale, and vegetable mix. Cook for 2 minutes or until heated through. Ladle among bowls and serve.
