Ingredients

  • 2 large cucumbers, peeled and chopped
  • 1/2 cup Greek yogurt
  • 1/4 cup fresh dill, chopped
  • 1 tbsp lemon juice
  • 1 cup cold vegetable or chicken stock
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 12-15 fresh scampi, peeled and deveined
  • 1 tbsp olive oil (for cooking the scampi)
  • Lemon wedges, for garnish
  • Fresh dill, for garnish

Steps
