Ingredients
- 2 large cucumbers, peeled and chopped
- 1/2 cup Greek yogurt
- 1/4 cup fresh dill, chopped
- 1 tbsp lemon juice
- 1 cup cold vegetable or chicken stock
- 1/2 tsp salt
- 1/4 tsp black pepper
- 12-15 thawed scampi, peeled and deveined
- 1 tbsp olive oil (for cooking the scampi)
- Lemon wedges, for garnish
- Fresh dill, for garnish
Method
- In a blender or food processor, combine the chopped cucumbers, Greek yogurt, fresh dill, lemon juice, vegetable or chicken stock, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to taste.
