Ingredients

  • 1 eschallot, finely chopped
  • 200g potato, cut into 1cm pieces
  • 1 small carrot, finely chopped
  • 1 stick celery, finely chopped
  • 2 cups (500ml) vegetable liquid stock
  • 600g asparagus, trimmed, roughly chopped
  • 1/2 cup (125ml) thickened cream plus extra, to serve
  • 1 tbsp Avruga caviar

Method

  1. In a medium saucepan, combine the eschallot, potato, carrot, celery, and vegetable stock. Bring to a boil, then reduce the heat and simmer, covered, for 5 minutes. Add the asparagus and continue to simmer for another 2 minutes.
  2. Using a blender or food processor, blend the soup with the cream until smooth. Season with salt and pepper to taste. Transfer the soup to a large heatproof bowl, cover with plastic wrap, and refrigerate for several hours or overnight until chilled.
