Ingredients

  • 500g pineapple cut squid
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1-2 red chillies, finely chopped (adjust for heat preference)
  • 1 tbsp fresh parsley, chopped (optional)
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
  • Steamed jasmine rice (for serving, optional)

Steps

  1. Season the pineapple cut squid with salt and pepper. Heat 1 tablespoon of olive oil in a wok or frying pan over medium-high heat.
  2. Cook the squid in batches for 2-3 minutes, or until golden brown and tender. Transfer the cooked squid to a plate and set aside.
  3. In the same pan, heat the remaining tablespoon of olive oil. Add the minced garlic and chopped red chillies, and stir-fry for about 30 seconds, until fragrant.
  4. Add the cooked squid back into the pan. Pour in the soy sauce and lemon juice, then toss to coat the squid in the garlic and chilli sauce.
  5. Stir-fry for another 1-2 minutes, ensuring the squid is well coated and heated through. Garnish with fresh parsley, if desired.
  6. Serve immediately, optionally with steamed jasmine rice. Enjoy your garlic and chilli squid dish!
